Sauted Chipolata Sausages and Vegetable Medley

  • 2 pkg of chipolata sausages
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 lb (454g) pumpkin diced
  • 1 lb carrots diced
  • 1 red pepper, thinly sliced
  • 1 green pepper, thinly sliced
  • 2 sticks of celery, sliced
  • ½ leek, sliced
  • 2 tbs olive oil


  1. In a skillet, cook sausages for 5 minutes under medium heat until cooked thoroughly
  2. Remove the sausages from skillet, set aside
  3. In the same skillet, heat the olive oil and add the onion and sweet pepper, sauté for 2-3 minutes
  4. Add the garlic and the vegetables, stir, add salt and pepper to taste, then add the chipolatas and cover
  5. Stir frequently on a low heat, until vegetables are cooked
