
Sauted Chipolata Sausages and Vegetable Medley

Ingredients:
- 2 pkg of chipolata sausages
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 lb (454g) pumpkin diced
- 1 lb carrots diced
- 1 red pepper, thinly sliced
- 1 green pepper, thinly sliced
- 2 sticks of celery, sliced
- ½ leek, sliced
- 2 tbs olive oil
Method:
- In a skillet, cook sausages for 5 minutes under medium heat until cooked thoroughly
- Remove the sausages from skillet, set aside
- In the same skillet, heat the olive oil and add the onion and sweet pepper, sauté for 2-3 minutes
- Add the garlic and the vegetables, stir, add salt and pepper to taste, then add the chipolatas and cover
- Stir frequently on a low heat, until vegetables are cooked
