
Sausages and Bow Tie Pasta with Zucchini

Ingredients:
- 1 pack Italian sausages (500g) or spicy pork sausages
- 1 lb (500g) bow tie pasta
- 2 tbs olive oil
- 1 medium onion sliced into thin wedges
- 1 zucchini thinly sliced
- 1 tin (400g) diced tomatoes
- 3 garlic cloves, minced
- salt and pepper
Method:
- In a skillet cook sausages for 15 minutes under medium heat until cooked thoroughly
- Remove the sausages from skillet, allow to cool, cut into small slices and set aside
- In the same skillet, heat the olive oil, add the onion, and sauté for 2-3 minutes
- Add the garlic and zucchini
- Cook the pasta in salt water according to package directions
- Add the sliced sausages, tomatoes, salt and pepper
- Drain the pasta and add the sausages and sauce, toss to combine and serve immediately
