Sausages and Bow Tie Pasta with Zucchini

  • 1 pack Italian sausages (500g) or spicy pork sausages
  • 1 lb (500g) bow tie pasta
  • 2 tbs olive oil
  • 1 medium onion sliced into thin wedges
  • 1 zucchini thinly sliced
  • 1 tin (400g) diced tomatoes
  • 3 garlic cloves, minced
  • salt and pepper


  1. In a skillet cook sausages for 15 minutes under medium heat until cooked thoroughly
  2. Remove the sausages from skillet, allow to cool, cut into small slices and set aside
  3. In the same skillet, heat the olive oil, add the onion, and sauté for 2-3 minutes
  4. Add the garlic and zucchini
  5. Cook the pasta in salt water according to package directions
  6. Add the sliced sausages, tomatoes, salt and pepper
  7. Drain the pasta and add the sausages and sauce, toss to combine and serve immediately
