Lentil and Sausage Casserole

Ingredients:

  • 1 pkg smoked sausages, cut in 8
  • 1 pkg (454g) lentils
  • ½ medium onion, chopped
  • 2 branches of parsley and celery
  • 3 cloves of garlic, minced
  • 1 carrot, diced
  • 1 sweet pepper, diced
  • 1 can (400g) diced tomatoes
  • 2 tbs vegetable oil

Method:

  1. In a large pan on medium heat sauté the onions and sweet pepper for 5 minutes
  2. Rinse and examine the lentils
  3. Add the lentils, the sausages and remaining ingredients to the pan, with two cups of water
  4. Simmer gently for 20 minutes until desired tenderness is reached, add salt to taste
