
Lentil and Sausage Casserole

Ingredients:
- 1 pkg smoked sausages, cut in 8
- 1 pkg (454g) lentils
- ½ medium onion, chopped
- 2 branches of parsley and celery
- 3 cloves of garlic, minced
- 1 carrot, diced
- 1 sweet pepper, diced
- 1 can (400g) diced tomatoes
- 2 tbs vegetable oil
Method:
- In a large pan on medium heat sauté the onions and sweet pepper for 5 minutes
- Rinse and examine the lentils
- Add the lentils, the sausages and remaining ingredients to the pan, with two cups of water
- Simmer gently for 20 minutes until desired tenderness is reached, add salt to taste
