Lamb and Beef Sausages with Couscous

  • 1 pkg of lamb and beef sausages
  • 1 can (400g) of garlic and tomato sauce, or whole peeled tomatoes
  • One medium eggplant, diced (optional)
  • 200g of couscous, follow the cooking instructions according to the package directions
  • 1 tbs of olive oil


  1. In a skillet cook sausages for 3 minutes on each side under medium heat
  2. Add the tomato sauce (and eggplant if using) and let simmer for 5 minutes, until cooked thoroughly
  3. To cook the couscous poor boiling salted water over couscous (1.5 of water to one volume of dry couscous), cover tightly and let absorb the liquid for five minutes
  4. Fluff with a fork, adding the olive oil
  5. Place couscous on a plate and serve the sauce and sausages over it
