
Lamb and Beef Sausages with Couscous

Ingredients:
- 1 pkg of lamb and beef sausages
- 1 can (400g) of garlic and tomato sauce, or whole peeled tomatoes
- One medium eggplant, diced (optional)
- 200g of couscous, follow the cooking instructions according to the package directions
- 1 tbs of olive oil
Method:
- In a skillet cook sausages for 3 minutes on each side under medium heat
- Add the tomato sauce (and eggplant if using) and let simmer for 5 minutes, until cooked thoroughly
- To cook the couscous poor boiling salted water over couscous (1.5 of water to one volume of dry couscous), cover tightly and let absorb the liquid for five minutes
- Fluff with a fork, adding the olive oil
- Place couscous on a plate and serve the sauce and sausages over it
